Tender pork cutlets and fresh vegetables are combined to create a complete family meal.
Ingredients
- 4 (about 200g each) pork cutlets
- 1/4 cup char siu sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon canola oil
- 500g chat potatoes, halved
- 1 bunch baby carrots, peeled
- 200g green beans, topped
- 2 teaspoons butter
- 1/4 cup coriander leaves, chopped
Method
- Step 1Place cutlets in a ceramic dish. Combine char siu and hoisin sauces. Rub mixture over both sides of cutlets. Cover. Refrigerate for 2 hours to marinate.
- Step 2Heat a barbecue grill or chargrill over high heat. Reduce heat to medium-low. Lightly brush grill with oil. Cook cutlets for 5 minutes each side or until just cooked through. Transfer to a plate. Cover with foil. Stand for 5 minutes.
- Step 3Cook potatoes in a saucepan of boiling salted water for 8 minutes or until tender. Remove to a bowl. Return water to the boil. Add a pinch of salt, carrots and beans. Cook for 2 minutes or until tender. Drain.
- Step 4Add butter, coriander, salt and pepper to potatoes. Toss. Serve with cutlets.
