tablespoons red wine or rice vinegar

teaspoon dijon mustard

Directions
- Shred carrots and beets; toss in parsley
- Mix olive oil, vinegar, sugar, cumin, and mustard together and toss salad in dressing
- Salt to taste
- Garnish with pumpkin seeds
