For cheesy goodness, tuck into these full loaded fries topped with baked with chorizo and caramelised onion.
Ingredients
- 1kg pkt frozen straight-cut chips
- 2 red onions, thinly sliced
- 2 chorizo, halved, thinly sliced
- 1 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
- 1 1/2 cups (165g) Devondale 3 Cheese Blend
- 1 tomato, finely chopped
- 1 shallot, finely chopped
- 2 tablespoons drained jalapenos, finely chopped
- 1 lime, juiced
- 1/4 cup coriander leaves
Method
- Step 1Preheat oven to 220C. Line a large baking tray with baking paper. Spread chips over tray and bake for 25 mins or until golden and crispy.
- Step 2Meanwhile, heat a large non-stick frying pan over high heat. Cook onion and chorizo, stirring occasionally, for 10 mins or until golden. Add sugar and vinegar and cook, stirring, for 1 min.
- Step 3Sprinkle chips with half the cheese. Top with the onion mixture. Sprinkle with remaining cheese. Bake for 5 mins or until cheese melts and is golden.
- Step 4Combine the tomato, shallot, jalapeño, lime juice and coriander in a bowl. Sprinkle over chips. Season.
