Crispy shards of shortcrust pastry taste fantastic with warm, caramel apples.
Ingredients
- 50g unsalted butter, at room temperature
- 55g (1/4 cup) caster sugar
- 2 egg yolks
- 115g (3/4 cup) plain flour
- 2 teaspoons milk
- 1/4 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- 2 teaspoons icing sugar
- 6 small Golden Delicious apples
- 60ml (1/4 cup) fresh lemon juice
- 100g unsalted butter, extra
- 55g (1/4 cup, firmly packed) brown sugar
- 300ml ctn thickened cream
Method
- Step 1Use an electric beater to beat the butter and caster sugar in a bowl for 3 minutes or until pale and creamy. Beat in the egg yolks until just combined. Stir in the flour, milk, mixed spice and half the cinnamon. Divide dough into 2 portions. Flatten each into a 10cm disc. Cover with plastic wrap. Place in the fridge for 1 hour or until firm.
- Step 2Bring the dough to room temperature. Preheat oven to 180ºC. Line 2 large baking trays with non-stick baking paper. Roll out 1 dough portion between 2 sheets of non-stick baking paper to a 28cm disc about 1mm thick. Repeat with remaining dough portion. Transfer the discs to the prepared trays. Place in the fridge for 15 minutes or until firm. Remove the top piece of baking paper. Bake for 10-12 minutes or until crisp and golden. Set aside to cool completely. Combine the icing sugar and remaining cinnamon. Dust the pastry with cinnamon mixture. Break into shards.
- Step 3Peel and core the apples and thickly slice crossways. Combine apple and lemon juice in a large bowl. Heat a little of the extra butter in a large non-stick frying pan over medium heat until foaming. Cook one-quarter of the apple for 2 minutes each side or until just tender. Transfer to a plate and cover to keep warm. Repeat, in 3 more batches, with remaining apple, adding more butter if necessary.
- Step 4Melt the remaining butter in the pan over medium heat. Add the brown sugar. Cook, stirring, for 2 minutes or until sugar dissolves and mixture is smooth. Gradually stir in cream. Simmer for 2 minutes or until caramel thickens. Drizzle over the apple. Serve with pastry.
