Made with juicy corn kernels, golden grape tomatoes and a splash of cream, succotash is a sweet home-style side for spiced chicken.
Ingredients
- 2 tablespoons Cajun spice mix
- 650g chicken thigh fillets, excess fat trimmed
- 2 teaspoons olive oil
- 2 garlic cloves, finely chopped
- 2 corncobs, kernels removed
- 60ml (1/4 cup) white wine
- 180ml (3/4 cup) Massel chicken style liquid stock
- 1 x 250g punnet golden grape tomatoes, halved lengthways
- 60ml (1/4 cup) pouring cream
- 2 teaspoons fresh thyme leaves
- Fresh thyme leaves, extra, to serve
- Crusty bread, to serve
Method
- Step 1Spread spice mix over a plate. Add the chicken. Turn to coat. Brush a barbecue grill or chargrill with half the oil. Preheat on high. Cook the chicken on grill for 5 minutes each side or until cooked through.
- Step 2Meanwhile, heat the remaining oil in a saucepan over medium heat. Add the garlic and cook, stirring, for 1 minute or until soft. Add the corn kernels and wine. Cook for 1 minute. Add the stock. Reduce heat to medium-low. Cook for 6 minutes. Add the tomato, cream and thyme. Cook for 5 minutes or until the tomato softens slightly and the corn is tender.
- Step 3Thickly slice the chicken. Divide corn mixture among serving plates.Top with chicken and extra thyme. Serve with bread.
