Add a touch of festive cheer to your Christmas celebrations with this sweet cherry pie dessert.
Ingredients
- 600g frozen pitted cherries
- 1 tablespoon lemon juice
- 1/2 teaspoon mixed spice
- 1/3 cup raw sugar
- 2 tablespoons cornflour
- 1 egg white, lightly beaten
- Double cream, to serve
Pastry
- 2 1/2 cups plain flour
- 1/2 cup brown sugar
- 225g butter, chilled, chopped
- 1 egg
- 3 teaspoons chilled water
Method
- Step 1Make pastry Process flour, brown sugar and butter until mixture resembles fine breadcrumbs. Add egg and water. Process until dough just comes together, adding more water if necessary. Turn pastry onto a lightly floured surface. Knead until just smooth. Shape into a disc. Cover in plastic wrap. Refrigerate for 20 minutes.
- Step 2Meanwhile, combine cherries, lemon juice, mixed spice and 1/4 cup raw sugar in a saucepan over medium heat. Cook, stirring, for 6 to 8 minutes or until cherries defrost and sugar dissolves. Blend cornflour and 1 tablespoon cold water in a bowl. Stir into cherry mixture. Cook, stirring, for 3 to 4 minutes or until thickened. Cool.
- Step 3Preheat oven to 200°C/180°C fan-forced. Grease a 2cm-deep, 11cm x 34cm (base) fluted loose-based flan tin. Roll two-thirds of the pastry between 2 sheets of baking paper until large enough to line tin. Press pastry into tin. Trim excess. Refrigerate for 10 minutes.
- Step 4Place tin on a baking tray. Spoon cooled cherry mixture into pastry case. Roll out remaining pastry until large enough to cover pie. Using a 4cm star-shaped cutter, cut stars from pastry. Remove stars. Place pastry over filling. Press edges together to seal. Brush with egg white. Sprinkle with remaining raw sugar. Refrigerate for 10 minutes. Bake for 40 to 45 minutes or until pastry is golden and crisp. Stand pie in tin for 10 minutes before removing. Slice and serve with cream.
