Soak the pineapple slices in orange juice for a family friendly option.
Ingredients
- 1 ripe pineapple, peeled, cut into 2cm-thick slices
- 1/4 cup (55g) brown sugar
- 1/4 cup (60ml) gin or white rum, or orange juice
- 2 tablespoons mint, finely shredded
- Mint leaves, to serve
- Lime zest, to serve
Method
- Step 1Combine the pineapple, sugar, gin or rum, or orange juice and shredded mint in a large bowl. Gently toss to combine. Set aside for 10 mins to soak.
- Step 2Preheat a barbecue grill or chargrill on medium. Drain pineapple, reserving the liquid. Cook pineapple on grill for 2 mins each side or until lightly charred. Transfer to a plate.
- Step 3Place reserved liquid in a saucepan on the barbecue or over medium heat. Cook for 1-2 mins or until syrup boils and thickens slightly. Remove from heat.
- Step 4Divide the pineapple among serving bowls. Drizzle with the syrup. Sprinkle with mint leaves and lime zest.
