The versatility of bolognese sauce is showcased in these tasty pies.
Ingredients
- 2 tablespoons olive oil
- 1 large brown onion, finely chopped
- 500g beef mince
- 2 garlic cloves, crushed
- 2 tablespoons tomato paste
- 400g can chopped tomatoes
- 9 sheets filo pastry
- 60g butter, melted
- 1/2 cup grated tasty cheese
- Salad, to serve
Method
- Step 1Heat 1 tablespoon oil in a frying pan over medium-high heat. Add onion. Cook, stirring for 3 minutes, or until softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 8 minutes or until browned. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Stir in tomato paste and tomatoes. Season with pepper. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until sauce has thickened. Cool completely.
- Step 2Place 1 sheet filo on a flat surface. Brush with butter. Top with 1 sheet filo. Repeat with another sheet to form 1 stack. Repeat with butter and remaining filo to form 2 more stacks. Cut stacks in half lengthways. Place 1/2 cup bolognese mixture in the centre of each stack. Sprinkle each with cheese. Fold pastry over filling to enclose.
- Step 3Heat remaining oil in a large frying pan over medium heat. Cook pies, in batches, for 3 minutes each side or until pastry is golden and crisp. Serve pies with salad.
