Author Notes: A super healthy and tasty dip made with black beans, corn, avocados, green onions, fresh cilantro, and a lime dressing. It’s a crowd pleasing appetizer, and it’s vegan! —Dash of Amy

Salsa

ounces can black beans, drained and rinsed

ounces can corn, strained

tomato, finely chopped

avocado, diced

bunch green onions, sliced

bunch fresh cilantro, finely chopped
Dressing

cup olive oil (light for milder flavor)

cup fresh lime juice (about 2 limes)

teaspoon salt

teaspoon black pepper

dashes Frank’s red hot sauce
Directions
Salsa
- Combine all ingredients in a large bowl and mix.
Dressing
- Whisk together all the dressing ingredients until it thickens, and pour over the salsa.
- Refrigerate for at least one hour before serving.
