These mini fruit mince pies make for the sweetest Christmas gifts!
Ingredients
- 3/4 cup dried mixed fruit
- 1/2 cup dried cranberries
- 1 small green apple, peeled, grated
- 1/2 cup black cherry and Madagascan vanilla jam
- 1/4 cup brown sugar
- 15g butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 2 tablespoons Grand Marnier
- 20g butter, melted, extra
- Icing sugar, for dusting
Vanilla Pastry
- 175g butter, chilled, chopped
- 2 cups plain flour, plus extra for dusting
- 1/3 cup icing sugar mixture
- 2 teaspoons vanilla bean paste
- 1 egg yolk
- 1 to 2 tablespoons iced water
Equipment
- 7cm round and 6cm star-shaped cookie cutter
Method
- Step 1Place mixed fruit, cranberries, apple, jam, brown sugar, butter, cinnamon, ground ginger, Grand Marnier and ¼ cup water in a saucepan over medium heat. Cook, stirring occasionally, for 5 minutes or until butter is melted. Cover. Simmer, stirring occasionally, for 10 minutes or until fruit is softened and mixture has thickened. Remove from heat. Set aside to cool completely.
- Step 2Make Vanilla Pastry Process butter, flour and icing sugar in a food processor until fine crumbs form. Add vanilla, egg yolk and 1 tablespoon iced water. Process until mixture just comes together, adding extra iced water, if needed. Turn pastry out onto a flat surface. Knead into a disc. Cover with plastic wrap. Refrigerate for 30 minutes or until cold.
- Step 3Preheat oven to 180C/160C fan-forced. Grease 2 x 12-hole round-based patty pans.
- Step 4Roll out 2/3 of the dough between 2 sheets of baking paper until 3mm thick. Using a 7cm round cookie cutter, cut 24 rounds from dough, re-rolling and cutting trimmings. Line holes of prepared pans with pastry. Spoon fruit mince evenly among pastry cases.
- Step 5Roll out remaining dough and any trimmings between 2 sheets of baking paper until 3mm thick. Using a 6cm star cookie cutter, cut 24 stars from dough. Place stars on top of fruit mince. Brush with butter. Bake for 20 to 25 minutes or until pastry is golden. Stand for 5 minutes. Transfer to a wire rack to cool.
- Step 6Serve pies warm or cold, dusted with icing sugar.
