Author Notes: One of the well known beer snacks in Beijing is the numbing-spicy peanuts. They are badly addictive: fried peanuts with a salty numbing kick. For entertaining this year, I’ve adapted the recipe to be healthier and just as tasty. Oh how I miss Beijing. Happy Chinese New Year! —FrancesRenHuang

cups peanuts (or mixed nuts)

tablespoon chinese chili oil sauce (like Lao Gan Ma ????

teaspoon brown sugar

teaspoon salt

teaspoon ground Sichuan pepper, toasted in pan until fragrant
Directions
- Preheat oven to 350 F.
- Mix all ingredients until the nuts are well coated; spread the nuts in one layer and bake for about 20 minutes, shaking frequently, until toasted and golden brown.
- Cool and enjoy!
