Asparagus and snow peas add colour and crunch to this vibrant beef stir-fry.
Ingredients
- 450g beef stir-fry strips
- 1 bunch asparagus, cut into 6cm lengths
- 100g snow peas, trimmed
- 1 small onion, sliced into thin wedges
- 2 teaspoons grated ginger
- 2 tablespoons peanut oil
- 2 tablespoons oyster sauce
- 1 tablespoon salt-reduced soy sauce
- 1 tablespoon sherry
Method
- Step 1Place soy sauce, oyster sauce, ginger and 1 tablespoon sherry in a large bowl, and mix to combine. Add beef strips, cover and refrigerate for 15 minutes to marinate.
- Step 2Heat half the oil in a wok or large non-stick frying pan. Drain the beef from the marinade. Cook beef over high heat in batches for 3 minutes or until nearly cooked through. Remove and wipe pan clean with paper towel.
- Step 3Heat remaining oil in the wok over high heat. Add onion and cook for 4 minutes or until just tender. Return the meat to the wok, along with the asparagus and snow peas, and stir-fry for a further 2 minutes. Serve immediately with steamed rice.
