Honey soy marinated tofu adds flavour and bulk to this traditional beef in black bean sauce.
Ingredients
- 400g beef rump steak, thinly sliced
- 2 teaspoons soy sauce
- 2 garlic cloves, chopped
- 2 tablespoons peanut oil
- 1 small red chilli, deseeded, thinly sliced
- 1 small brown onion, cut into thin wedges
- 1 red capsicum, sliced
- 200g choy sum, cut into 5cm lengths
- 200g honey soy marinated tofu, chopped (see note)
- 1/4 cup black bean sauce
- Steamed white rice, to serve
Method
- Step 1Place beef, soy sauce and garlic in a bowl. Stir to combine. Cover and refrigerate for 15 minutes, if time permits.
- Step 2Meanwhile prepare vegetables. Heat wok over high heat. Add half the oil. Swirl to coat. Stir-fry beef, in batches, for 2 to 3 minutes or until sealed. Transfer to a plate.
- Step 3Heat remaining oil in wok. Add chilli, onion and capsicum. Stir-fry for 1 to 2 minutes or until vegetables are softened. Add choy sum, tofu and beef. Stir-fry for 1 to 2 minutes or until heated through.
- Step 4Add black bean sauce and 1/4 cup cold water. Stir-fry for 1 to 2 minutes or until heated through. Serve with rice.

Notes
Tofu, or soy bean curd, is highly nutritious and a good source of protein. It’s available in marinated varieties from the supermarket that you can easily slice and add to stir-fries towards the end of cooking.
