Beef and tofu in black bean sauce
Beef and tofu in black bean sauce

Honey soy marinated tofu adds flavour and bulk to this traditional beef in black bean sauce.

Ingredients

  • 400g beef rump steak, thinly sliced
  • 2 teaspoons soy sauce
  • 2 garlic cloves, chopped
  • 2 tablespoons peanut oil
  • 1 small red chilli, deseeded, thinly sliced
  • 1 small brown onion, cut into thin wedges
  • 1 red capsicum, sliced
  • 200g choy sum, cut into 5cm lengths
  • 200g honey soy marinated tofu, chopped (see note)
  • 1/4 cup black bean sauce
  • Steamed white rice, to serve

Method

  • Step 1
    Place beef, soy sauce and garlic in a bowl. Stir to combine. Cover and refrigerate for 15 minutes, if time permits.
  • Step 2
    Meanwhile prepare vegetables. Heat wok over high heat. Add half the oil. Swirl to coat. Stir-fry beef, in batches, for 2 to 3 minutes or until sealed. Transfer to a plate.
  • Step 3
    Heat remaining oil in wok. Add chilli, onion and capsicum. Stir-fry for 1 to 2 minutes or until vegetables are softened. Add choy sum, tofu and beef. Stir-fry for 1 to 2 minutes or until heated through.
  • Step 4
    Add black bean sauce and 1/4 cup cold water. Stir-fry for 1 to 2 minutes or until heated through. Serve with rice.

Notes

Tofu, or soy bean curd, is highly nutritious and a good source of protein. It’s available in marinated varieties from the supermarket that you can easily slice and add to stir-fries towards the end of cooking.
