Irresistible sweet plums and hoisin sauce create a fusion of rich Chinese flavours.
Ingredients
- 3 teaspoons sesame oil
- 6 small plums, halved, stones removed, cut into thirds
- 1 tablespoon brown sugar
- 500g beef fillet, thinly sliced across the grain
- 2cm-piece fresh ginger, finely shredded
- 2 garlic cloves, thinly sliced
- 2 bunches broccolini, halved
- 2 tablespoons hoisin sauce
- Steamed white rice, to serve
- Fresh Thai basil leaves, to serve
Method
- Step 1Heat 1 teaspoon of oil in a wok over medium heat. Add plums and sprinkle with sugar. Cook, stirring occasionally, for 5 minutes or until slightly golden. Transfer to a plate.
- Step 2Heat half of the remaining oil in the wok over medium-high heat. Add half the beef. Stir-fry for 1-2 minutes or until golden. Transfer to the plate with plums. Repeat with remaining beef, reheating the wok between batches.
- Step 3Heat the remaining oil in the wok over medium-high heat. Add ginger, garlic and broccolini stems. Stir-fry for 1 minute. Add broccolini florets and stir-fry for a further 1 minute or until bright green and tender crisp.
- Step 4Add beef, plum mixture and hoisin sauce to wok. Toss until well combined and heated through. Season with pepper. Divide rice and stir-fry among serving dishes. Top with basil. Serve.
