Beef and sweet potato pasties can be eaten with one hand. Put a beer in the other and enjoy the footy finals with friends!
Ingredients
- 1 tablespoon olive oil
- 1 brown onion, finely chopped
- 600g beef mince
- 3 teaspoons curry powder
- 1/4 cup tomato paste
- 300g kumara (orange sweet potato), peeled, grated
- 4 sheets puff pastry, thawed
Method
- Step 1Heat oil in a non-stick frying pan over medium heat. Add onion. Cook, stirring, for 5 minutes or until soft and light golden. Increase heat to high. Add mince. Cook, stirring, for 8 minutes or until browned.
- Step 2Add curry powder, tomato paste, kumara and 1/2 cup water to frying pan. Stir to combine. Cook for 10 minutes or until liquid has evaporated. Season with salt and pepper. Set aside to cool completely.
- Step 3Preheat oven to 200°C. Lightly grease a baking tray. Cut each pastry sheet into squares. Spoon 1/4 cup mince mixture onto centre of each square. Fold in half to form triangles. Pinch or press edges with a fork to seal. Place onto baking tray. Bake for 25 minutes or until puffed and golden. Serve with tomato sauce, if desired.
