In the mood for Mexican? These spicy beef and bean quesadillas are packed with vegies and so easy to prepare.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 250g beef mince
- 2 carrots, chopped
- 3/4 cup tomato passata
- 420g can Heinz® Beanz Creationz™ Fiery Mexican Style Beanz
- 120g (1 cup) frozen peas
- 8 flour tortillas
- 300g (3 cups) pizza cheese
- Sour cream, to serve
Tomato salsa
- 200g grape tomatoes, quartered
- 2 shallots (green onions), chopped
- 1 tablespoon extra virgin olive oil
Method
- Step 1Heat oil in a large pan on medium. Cook onion for 5 minutes, until soft. Increase heat to high. Add mince and cook, stirring to break up any lumps, for 5 minutes, until browned. Add carrots, passata and Beanz Creationz™ and stir to combine. Bring to the boil. Reduce heat and simmer, covered, for 15 minutes, until reduced slightly. Stir through peas and remove from heat.
- Step 2Preheat grill to medium and line 2 large baking trays with foil. Lay 2 tortillas on each prepared tray. Top each tortilla with 2/3 cup of mince mixture and 1/4 cup of cheese. Top with another tortilla and press down slightly. Sprinkle ½ cup of cheese over each quesadilla. Cook under grill for 8-10 minutes, until golden and bubbling.
- Step 3Meanwhile, mix together salsa ingredients and season well. Slide each quesadilla onto serving plates and top with a dollop of sour cream and salsa.
