Spicy beef mince and pasta makes a nutritious family meal.
Ingredients
- 2 tablespoons olive oil
- 1 red onion, diced
- 2 cloves garlic, crushed
- 2 large red chilli, seeded and finely chopped
- 3 teaspoons ground cumin
- 2 teaspoons ground coriander
- 700g regular beef mince
- 2 stalks celery, diced
- 420g can kidney beans, rinsed
- 1 cup water
- 2 tablespoons tomato paste
- 1/2 cup fresh coriander leaves
- 375g pkt soyaroni
Method
- Step 1Heat the oil in a large saucepan over a moderate heat. Saute the onion and garlic for 5 mins or until soft. Add the chilli, cumin and coriander and cook for 1 min.
- Step 2Add the beef mince and cook for 5-7 mins or until the beef is sea red. Stir through the celery, kidney beans, water and tomato paste, bring to the boil, then simmer uncovered for 15 mins. Season with salt & pepper. Remove from the heat and stir through the coriander.
- Step 3Meanwhile, bring a large saucepan of water to the boil, cook the soyaroni according to packet directions, drain and serve with the chilli.
