Author Notes: Toast is my go-to afternoon snack, and sometimes it needs a little sprucing up. The simple ‘herbed goat cheese + some vegetable/fruit’ is probably my favorite formula; it can go so many directions, and takes advantage of what’s ripening in the garden or on my counter. I used the basil goat cheese I’d been eating off all week (with tomatoes), and added a little honey to welcome in the fresh peaches. Really, goat cheese toast is a vessel for pretty much any lovely combination your kitchen offers. —spacekase

slices hearty bread, thickness is up to your preference

ripe peach, sliced thick

Directions
- Remove leaves from basil sprigs, stack them and roll them up, and slice as thinly as you can. Mix this basil with your soft goat cheese. I make up a big batch of this and keep it in the fridge all week.
- Toast your bread, spread the basil goat cheese thickly (I usually use about half of the amount this recipe makes). Drizzle honey across the top, and layer on the peaches.
