Author Notes: This recipe is an insanely quick recipe for a party. The presentation is stunning in a cast iron, especially once you cut into the brie and the cheese oozes from the casing. —What We Eat Gals

Ingredients
-
1
Large Wheel of Brie or Camembert
-
1
cup Dried Figs, sliced into rounds
-
3/4
cup Toasted Walnuts, rough chopped
-
3/4
cup Toasted Pistachios, rough chopped
-
1/4
cup Champagne Vinegar
-
3/4
cup Fig Jam
-
Finishing Salt, Such as Maldon
-
Your favorite crackers
Directions
- Preheat oven to 375. Place cheese in the middle of a medium sized cast iron skillet.
- Warm vinegar in a pot over medium-low heat until hot. Add fig jam and stir until jam is thin and syrupy. Brush half of the mixture over brie in a thick layer.
- Mix nuts, sliced dried figs, and remaining fig jam mixture in a bowl. Spoon over top of cheese, creating a thick layer. Mixture will fall off on to side, that’s okay!
- Bake uncovered for 10 minutes, until brie is soft inside. Let sit for about 5-10 minutes to let cheese rest for a bit and cool before you cut into it. Finish with salt and serve with your favorite crackers.
- **Recipe can be made ahead of time and chilled until ready to bake.
