Author Notes: I love anything with caramelized onions and always look for ways to add them to any dish. The came about after I bought some pizza crust last year and realized I didn’t have any Marinara sauce prepared or handy for a traditional pizza margherita. Turned out to be a recipe I have now made several times and is well enjoyed. Leftovers a great for work the next day. Makes the entire office smell yummy! —Francesca
Serves: 2-4, depending on slice size
Ingredients
-
1
prepared pizza crust
-
2-3
golden delicious appled
-
3
small red onions
-
2-3
tablespoons olive oil
-
1/2
teaspoon salt
-
pinch
black pepper
-
1
sprig rosemary
-
3/4
cup shredded gouda cheese
Directions
- Preheat oven at 400
- Take your prepared pizza crust and with a rolling pin, start working towards getting a rectangle about the size of a cookie sheet. Place dough on the cookie sheet that has been lightly oiled using a pastry brush. You could, of course, make your own pizza crust.
- Thinly slice your onions and start caramelizing them with olive oil, salt, pepper and rosemary. This will take a good ten minutes to get them nice and caramelized. You could use yellow onions, but I find the red ones to be sweeter and a good match with the tart golden delicious apples.
- Speaking of apples, while the onions are caramelizing, start peeling your apples and slicing them as thin as you can.
- Spread onion mixture on your pizza crust
- Place apple slices on the onion mixture, try to not overlap them
- Top with shredded gruyere cheese
- Bake for about 20 to 25 minutes, depending on how crispy you like your pizza. I like mine very crispy so usually go to about 25 minutes, but start keeping an eye out at around 18, everyone’s over is different.
