Author Notes: It just felt like winter this morning and regular waffles just weren’t going to cut it. We drink massive amounts of apple cider this time of year and I thought its flavor would be perfect for a waffle. My son requested oatmeal for breakfast so I thought I would make this batter partly from finely ground oatmeal. Topped with apples caramelized in some salted butter these waffles have everything I look for in the morning. I used pumpkin pie spice in mine because it is easy, but you could substitute equal parts cinnamon, nutmeg, and allspice. —meganvt01
