Author Notes: Diwali is just around the corner and I got my hands on this awesome recipe on Sprouted Kitchen. I modified it to make it taste Indian and it is probably one of the easiest mithais (sweets) to make. Last year I made Halwa, which is a traditional mithai with semolina flour, ghee (clarified butter), sugar and milk. I opted to make something easy, modern and relatively healthy this year. Almonds are my favorite and I call them alpha nuts because of their incredible nutritional value. cup cashews

cup unsalted smooth almond butter

cup almonds

teaspoon cinnamon

teaspoon nutmeg

pinch ground cardamom

cup shredded unsweetened coconut

tablespoon granulated white sugar
Directions
- Toss everything (except the shredded coconut and sugar) in a food processor and run it for about a minute or two. You want the mixture to be mealy rather than turning it into an almond-cashew-date butter. Taste the mixture and see if you need to add sugar. I don’t like my dessert too sweet so I didn’t need to add any extra sugar because the dates were sweet enough.
- Make 1-2 inch balls.
- Roll them in the coconut+sugar mixture.
