Author Notes: Inspired by the 1942 Hollywood classic, Casablanca, this riff on a mojito strikes the perfect balance of the herbs, citrus, and spices you can find in Moroccan cooking—like mint, cinnamon, and tamarind. The film is set in—you guessed it—Casablanca, Morocco, during the early 1940s and this refreshing, bubbly libation would feel right at home at the ever-bustling Rick’s Café Americain. —Food52
